Protein Recipe

One other delightful fact about living on the equator is
that people report again and again that they lose weight without trying.
I believe this comes from three factors. First, the higher altitude in the
Andes causes the metabolism to speed up a bit. Second, one walks more there!
Finally, and most import we eat better! There is less fast
and junk food, plus the typical meal is not laded with sugar and lots of
fast burning carbs.
One great food that we eat a lot in Ecuador is Quinoa, the
super grain of the Andes. This is the only vegetable source of complete protein.
Actually Quinoa is a seed but is eaten just like cereal. We have it most
mornings for breakfast. Here is a delicious recipe for breakfast Quinoa.
Breakfast Quinoa
1-1/4 c water
1/2 c milk
1/2 c quinoa
1/4 c raisins or fresh fruit
2 tbsp natural sugar (panela)
1/2 tsp cinnamon (canela)
Bring quinoa to boil in water and let sit for 20 minutes.
Add milk, sugar, fruit and cinnamon to taste. This is healthy and delicious!
Full of protein and the cinnamon also acts as a blood sugar modulator.
